I used half to make a Chinese dish called MaPo Tofu and it tasted amazing!! I used the other half making some pasta and loved the flavor of the fat! Used the fat with onions, garlic, tomato paste to start my sauce. I enjoy all the various wagyu ground beef from Crowd Cow… if you ever get the chance, please try their olive wagyu!!
