So for what you're purchasing, you want the marbling but not an ounce of fat concentrated with no meat on the edge. Considering the price per ounce. Great taste, trimmed properly per the cost would be best. Will not order this again.

Besides the usual A5 marbling, the meat had huge veins of hard, white fat running through it. Not impressed this time around.
