Wow. As a California native; the birth of Tri Tip and a cut we counter to Texas with their brisket…this farm absolutely makes a superb high quality cut of beef with this tri tip. The cut was already trimmed and ready to go so the weight your buying is the weight your cooking and this quality grown cut of beef is above the best you’ll find in your local butcher. Super clean and the marbling was out of this world packed with flavor. Wish I could add pictures of end result to a perfect medium rare served cut.
